Ask an adult what their favourite school lunch was as a kid and nine out of ten will probably say “PB & J!” Something about the soft white bread, salty peanut butter and sweet, sticky jam was so familiar and yet so magical at the same time—a sandwich you never grew tired of.
Today, we know that white bread and certain brands of peanut butter and jelly are far from healthy, full of sugar and fat and empty calories. Not the sort of lunch you want to pack for your child! But still, the nostalgia remains. This school year, we recommend taking inspiration from the classic but updating everyone’s favourite sandwich with some healthful ingredients. Sub a seedy, whole grain bread for a white loaf, use all natural peanut butter (we like crunchy best!) and opt for organic, low-sugar jam. We think you (and your kids) will be surprised at just how tasty this update is!
