Success starts at the grocery store

Salt well, salt early
When it comes to seasoning your roast, don’t hold back with the salt. Be sure to generously season the roast on all surfaces with kosher salt at least 45 minutes before cooking. This allows the salt a chance to penetrate the meat, seasoning and tenderizing.
Let it be
Once your roast is finished cooking, allow it to rest for at least 15 minutes before carving. This will ensure all those flavourful juices redistribute throughout the meat.
