Ease the chill of winter with a warming, hearty stew. We prefer a mix and match method, which allows you to customize your stew to your liking. Simply pick a protein, a vegetable or two, a rich stock and some flavourful aromatics. Grab your biggest soup pot and let the afternoon simmer away.

Step 3: Pick (at least two) Vegetables

Step 4: Pick some Aromatics
In a large soup pot, sauté protein and aromatics. Add stock. Add vegetables. Simmer until all ingredients are cooked through and stew is flavourful. Season to taste with salt and pepper and add fresh herbs, if using.

• Protein, vegetables and aromatics (especially the onion, garlic and leek) should be chopped into bite-sized pieces
• Meat should always be seared and cooked in oil first before adding vegetables and aromatics
• For veg stews, allow time for dried lentils to cook and soften in the stock (canned beans can be added later in the cooking process)
•When you add your vegetables is important – consider how long it will take for each vegetable to cook (e.g. sweet potato will take longer than chopped kale)
• Fresh herbs should be added near the end of cooking time to retain freshness
