What could be easier? Marinate pork tenderloin in the fridge, slice into “patties” and throw them on the grill. Here at FRESH, we’re big advocates of a marinade because it works double-duty: it imparts flavour and tenderizes meat at the same time. The recipe below calls for using your favourite Angelico’s salad dressing as a marinade (we repeat: what could be easier?) but if you’re looking to make your own, the general rule is one part oil, one part acid (think: vinegar or citrus juice), one to two parts aromatics (we love herbs and spice), and salt and sugar to taste. Pork Tenderloin Sliders
Prep time: 2 minutes + time to marinate
Cooking time: 20-25 minutes
Two 12 oz (340 g) Ontario pork tenderloins
2/3 cup (165 mL) your favourite Angelico’s dressing or make your own

Apple slices, caramelized onions and B&W arugula
Place pork tenderloins in a zip-top plastic bag and add salad dressing. Seal bag and massage marinade into pork. Place in refrigerator for minimum 1 hour (up to overnight). Read our full issue online for grilling tips and BBQ basics.
Slice the pork tenderloin into 1/2 inch (1 cm) thick medallions to use as the slider patties, grill, top and serve.
