According to Julia Child, a quiche is a mixture of anything “combined with eggs, poured into a pastry shell, and baked in the oven until it puffs and browns.” This quiche, a refined French classic, features leek, smoked salmon and brie cheese. Serve with a crisp green salad and crusty baguette to round out this tasty meal.
Leek, Smoked Salmon and Brie Quiche
2 tbsp (30 mL) butter
2 leeks, white and light green parts only, halved lengthwise, sliced crosswise 1/4” (2/3 cm) thick
1 egg yolk
1/2 cup (125 mL) milk
1/2 cup (125 mL) heavy cream
salt and pepper
6-8 oz (170-225 g) smoked salmon
6 slices of brie cheese, cut 1/4” (2/3 cm) thick
1 unbaked Tenderflake pie crust (if frozen, thawed)
Preheat oven to 375°F (190°C).
In a large frying pan, melt butter over medium heat. Add leeks and cook, stirring occasionally, until softened (about 5-7 minutes). Remove from heat and set aside.
In a large bowl, beat eggs, egg yolk, milk, cream and salt and pepper. Stir in leeks and smoked salmon. Pour egg mixture into pie crust and arrange slices of brie cheese on top.
Bake quiche for 25-30 minutes, or until quiche is puffed and golden.
