Date & Almond Power Shake

Recipe makes 1 drink
4 dates, soaked in hot water
6 oz. vanilla soymilk
1 banana, peeled
1 tbsp almond butter
1 tsp maple syrup
1 shake cinnamon
Soak the dates in hot water for 5 minutes. Put the soymilk, soaked dates and banana in the blender. Start the blender on a low setting while you add the almond butter, maple syrup and cinnamon. Switch to a higher setting and blend for about 2 minutes. Pour into a tall glass.
The combination of bright and herby falafel balls with creamy tahini, spicy chili oil, sweet date syrup and crispy onions is unusual and scrumptious. You could also stuff these ingredients inside a pita—the more traditional vessel for falafel.
Recipe makes 8 tacos
8 6-inch whole wheat tortillas
2 cups romaine lettuce, shredded
1 cup diced tomatoes
16 herb falafel balls, cooked
1/2 cup crispy onions (recipe below)
1/2 cup tahini dressing
8 tsp date syrup
Chili oil, to taste
Heat tortillas on a grill or in the oven until warmed. Fill each taco shell with . cup romaine, 2 tbsp diced tomato, 2 falafel balls, 1 tbsp crispy onions, 1 tbsp tahini dressing, 1 tsp date syrup and a drizzle of chili oil.
Recipe makes 1 cup
1 cup onions, thinly sliced
1/4 cup flour of your choice (spelt, all purpose, gluten free)
Sea salt, to taste
1/4-1/2 cup canola or sunflower oil for frying
Toss sliced onions in flour until thoroughly coated. Heat oil in frying pan over medium high heat. Add some onions and cook until browned. Just do a few at a time, making sure not to crowd the pan. Remove from pan and drain on paper towels. Sprinkle with salt as soon as they come out of the oil.
