The arrival of summer brings with it many promises: of long weekends, of good weather, and our favourite, ripe, juicy berries. We look forward all year to the first pickings, red and plump, or bursting and midnight-blue. Is there anything more satisfying?
While we love to eat berries straight from the box, a simple, healthy parfait plays double duty as breakfast or dessert, highlighting the natural flavour of summer fruit.
Simply layer your choice of berries (a mixture is always fun) with tangy yogurt, a drizzle of honey, and crunchy granola. Our maple syrup-sweetened granola recipe, below, comes together without much effort but the most delicious results.
Maple Walnut Granola
Recipe makes about 7 cups
3 cups large flake oats
1 cup sliced almonds
1 cup walnuts, coarsely chopped
1 cup hulled pumpkin seeds
1 cup unsweetened and shredded coconut
1/2 cup extra-virgin olive oil
1/3 cup dark maple syrup
1/3 cup packed dark brown sugar
Coarse sea salt
Preheat oven to 300°F. Combine first 8 ingredients in your largest bowl and stir to combine (make sure all the ingredients are nicely coated in the syrup and oil). Spread evenly on your largest baking sheet and bake for 45 minutes, stirring granola every 15 minutes. Granola should be dark and crispy.
Remove from oven and allow to cool. Store in an airtight container.
