We’re loving this fall inspired dessert – nut-free, gluten-free & dairy-free (optional).
1/4 cup (60 mL) quinoa (equals 1 cup/250 mL cooked)
1 medium pear
1 medium apple
1/2 cup (125 mL) water
1/2 cup (125 mL) sugar
2 tbsp (30 mL) cinnamon
1 1/2 tsp (7.5 mL) cornstarch
1 tsp (5 mL) chia seeds
vanilla bean gelato OR vanilla bean ice cream
Cook quinoa according to package. Set quinoa aside to cool.
Chop pear and apple into small pieces. Add the chopped pear and apple to a medium sized pot. Add the water, sugar, cinnamon and cornstarch to the pot and heat on high heat for 3-5 minutes. Stir to prevent sticking to the pot. Turn heat down to medium for another 5 minutes stirring once or twice more. Remove compote mixture from heat.
After quinoa has cooled, add the chia seeds.
To assemble the parfait: layer the gelato, apple and pear mixture, and quinoa.
