While we’ll never tire of classic pancakes topped simply with maple syrup, sometimes it’s fun to abandon convention and try something new. In many ways, pancakes are a blank slate—a fluffy, neutral base that pairs well with a variety of ingredients. We’ve had fun recently experimenting with both sweet and savoury pancake toppings. Check out our favourites, below.
For an elegant, savoury dish that works for breakfast or as an appetizer in smaller portions, top your cakes with smoked salmon and a dollop of crème fraîche.
Have dessert first!
For a decadent, dessert-like stack, add ricotta to your batter and top the finished pancakes with clotted cream or ice cream and a sprinkling of your favourite berries, bananas or chocolate chips.
For the health nut
Go for a healthier option by serving up whole wheat pancakes and top with frozen black cherries (thawed) and low-fat vanilla yogurt.
When all else fails…
Drizzle with maple syrup (because you can’t not have maple syrup!).
